
Can be served with Lebanese bread for an appertiser or an accompaniment with a main meal.
Ingredients:
1 lebanese cucumber (or close to)
1/2 cup greek style natural yogurt
2 tabs chopped fresh mint
Pinch of salt
Instructions:
Cut cucumber in quarters lengthways. Remove and disard seeds, finely chop cucumber.
Place cucumber in a bowl and sprinkle salt over the top, leave for a few minutes until you see juices appear.
Combine cucumber with yogurt and mint in a small bowl. Cover and refrigerate until ready to serve.
